Long-derided as a fizzy staple of park-dwelling adolescents, cider in Britain has undergone a curious transformation recent years to become a growing favourite of the discerning urban drinker. Nationwide sales of the fruity tipple almost doubled between 2004 and 2009 and, though they flattened out last year as the recession hit drinkers hard, analysts are predicting boom to continue -- particularly among the premium ciders that now make up 40% of the market in value. This contrasts sharply with beer which has suffered a gradual decline in popularity in recent years, seeing a 7% sales slump in the 12 months to June after January's VAT rise and April's beer tax hike.
