INDIA-FOOD-JAGGERY
Indian labourer, Selim Seikh (52) boils the sap of the date palm tree to prepare jaggery - cane sugar - in Joynagar, around 50 kms south of Kolkata on January 16, 2015. The Jaggery made in a traditional way from the sap of the date palm, which is available only from November to January, is both more prized and less commonly available and is also used in making different kinds of sweet dishes. With urbanization of the rural areas growing at a very fast rate, the trees are being cut down and increasing pressure on the existance of this industry and tradition. AFP PHOTO / Dibyangshu SARKAR
